After church she fell asleep in my arms. Taking it all in while she is still a baby.
I made a healthified Superbowl meal thanks to Gardein!
Burgers and Fries
Whole wheat pitas
Spinach
Honey Mustard
Sweet Potato Fries (in the oven)
Delicious! I highly recommend Gardein products. All the ones we have tried we loved and they don't have that vegetarian texture like most products.
I plan to be making alot of recipes with this new purchase this week.

All natural coconut flour (great for gluten free people!)
Coconut Tortilla - natural, paleo, gluten free
Coconut flour Pancakes - natural, paleo, gluten free
2 egg whites
1/4 cup coconut flour
1/2 cup almond milk
1 tsp vanilla
1/2 tsp baking powder
cinnamon
sweetener of choice (honey, splenda, agave)
Coconut Biscuits - natural, paleo, grain free
1/3 cup coconut flour
4 eggs or 2 egg 4 egg whites
1/3 cup applesauce, or oil
1/2 tsp baking powder
dash of salt
Coconut Tortilla - natural, paleo, gluten free
Coconut flour Pancakes - natural, paleo, gluten free

1/4 cup coconut flour
1/2 cup almond milk

1/2 tsp baking powder

sweetener of choice (honey, splenda, agave)
Coconut Biscuits - natural, paleo, grain free
1/3 cup coconut flour

- Combine all ingredients and stir until thoroughly combined. (Be patient as this may take a few minutes.) Heat a greased nonstick skillet over medium high heat for a minute or two. (You want the pan to be completely pre-heated so the first pancakes cooks correctly.) Pour desired amount of batter onto skillet (I used two tablespoons to make medium-sized pancakes), and cook until golden, a few minutes on each side. Transfer to a plate and repeat with remaining batter, re-greasing (or spraying with cooking spray) between each pancake. Top at will and devour!

This literally takes 3 minutes to make! (perfect ratio of carb, protein, fats)
Cinnamon Oatmeal Souffle
All you need is
1/2 cup rolled oats (I use gluten free Trader Joes)
1/2 cup water or almond milk
3 egg whites
Cinnamon
1-2 Tbsp. Ground Flaxseed
Sweetener of choice (honey, splenda, agave, you pick!)

Aw, I love when they fall asleep in your arms! Caroline did it for the first time the other day in a long time and I had so many things to do but I was like "nope! This isn't going to last forever." Have to eat up those moments when you can!

ReplyDeleteI have been dragging my feet on buying coconut flour, but I just need to suck it up and do it. So many GF recipes use it, and I need to get better with my GF baking... so hopefully on my next trip I'll add some to my cart :) I love your recipe suggestions and ANYTHING with pumpkin can't be wrong!
