We had a very nice day here for MLK and the weather was perfect for a family outing.
I had planned on getting a TON done yesterday with work related things...class descriptions, templates, excel sheets, the works...
BUT then I just didn't feel like it.
I looked outside and the light was shining and I knew I needed to just GET OUT.
We hit up the Greenway for an hour walk...fresh air!
This was a GREAT decision, especially considering that today the high is only 38 and yesterday hit 60!
Now getting to the point of thinking, planning, and doing.
Yesterday obviously I thought about what I wanted to do. I planned out my day. BUT I didn't actually do what I had planned. AND that was OK!
I knew I could put those plans at rest and that tomorrow was another day. I also had a 75 minute cycle/abs and ups class to teach last night, so I took the day to ENJOY.
There are only certain times when you can sit down and just ENJOY the moment.
Especially when your little one falls asleep in your arms. I literally just SAT THERE and took it all in.
MY husband and I got to talking about thinking, planning, and doing.
I am a planner for sure...I am NOT much of a thinker...and I am HUGE doer.
Basically I plan something out and I JUST DO IT. Without much thought I just do things. This can sometimes bite me in the butt because I don't put much thought into things BUT it can also be to my advantage because I do get things done (hence the DOING).
MY husband is the total opposite. He THINKS and PLANS everything out to a T. But then when it comes to the DOING only half of it will actually get done or he will OVERTHINK and OVERPLAN things....
This is where I am going with this.
There is an equilibrium with life.
You need to THINK. You need to the PLAN it out. BUT then you need to actually DO what you plan and not just TALK about it.
I realize that alot of times I will just get so anxious to get going and do what I have planned that I don't actually take the time to think about things. YES I need to actually use that brain of mine :)
Then I always tell my husband that he needs do just DO what he has planned and not to think about things soooo much. FUNNY how we are the opposite with those things...I guess that saying that opposites attract is actually true ;)

Onto a recipe that I just NEED to try.
Do not worry I am not on Paleo or anything but what I do love about Paleo is that it is all natural ingredients which means NOTHING processed. I plan on going to get some coconut flour today and making these Coconut Tortilla to use with a stir fry. These just sound TOO GOOD not to try!

1/4 cup coconut flour (40 g)
1/4 teaspoon baking powder
8 egg whites
1/2 cup water
pinch of salt
coconut oil
- Mix all ingredients in bowl and set it aside for 5 minutes to thicken and hydrate.
- Once pan or griddle is heated, LIGHTLY grease it with coconut oil (too much will make them crispy and bubbly).
- Pour slightly less than 1/4 cup of batter into middle of griddle, and smooth out, forming a nice circle (pouring in a spiral pattern may help).
- Once the edges just start to turn brown (about 1-2 minutes, but be sure to watch it closely), flip the tortilla with a spatula and cook for another 1-2 minutes.
- Transfer cooked tortillas to a plate with another plate on top, a tortilla warmer, or a folded towel to keep warm.
- Serve them with your favorite fixings for tacos, burritos, or as fajitas,like we did. Enjoy!

Last night I taught a 75 min cycle class and it was freakin awesome. A full class that I did some FUN things with and had them participate in the sprints and everyone (literally all 50 people) were drenched by the end. Success :)
Today I teach circuit and also plan on doing my bodyflow at home.
