2 my latest cravings...and latest teachings

I am glad ya'll liked the video of Brooklyn. She is having so much fun discovering things right now and is starting to mimic things we do! EVERYDAY she starts something new...

No I am not pregnant.
YES I always have cravings and am into something new with my favorite foods.
Lunch has been my 1st thing I switch up, mostly because I love my Oatmeal in the morning soo much and that doesn't change until Summer time when I get into SMOOTHIES!

I always plan meals in this way: I need a protein, carb, and veggie (making sure healthy fats are in one of those things as well)

So here we go with my latest cravings...
Protein/Fats:

California Veggie Burgers
Wild Alaskan Salmon (canned because its WAY cheaper)
This can be found at Costcos
You can find these at Trader Joes and Krogers in the health food section.
 I dont know if I acquired a taste for these or what but I LOVE them. Husband...not soo much. I love that every ingredient you can read, and I like the fact that it falls apart because everything is made from WHOLE natural foods (some might not like that...maybe I'm weird...its ok I don't mind!)
The Salmon is a great way to get in a TON of protein and healthy omegas (fats)

Eggs
I typically have 2 eggs and 1 egg white for the perfect balance of protein and fats.
2 great ways to make them are a Veggie Omelet
-Sautee onions in a dash of olive oil
-Steam Broccoli
- Once onions are browned add the broccoli and the eggs over top
-Flip the mixture and add Janes crazy mixed up salt to your liking
- I like the omelet browned and crispy but just make sure the eggs are fully cooked

Or you can simply just cook the eggs and have it plain or as a sandwich

Healthy Carbs
Sweet potato or SP fries...Yes bring on the VEGGIE load!

Talk about a cheap way to get in a superfood and have it taste great. These are always satisfying and a complex carb with a TON of nutrients and staying power.
I got a whole bag for 1.69 at Trader Joes...now I plan on having one a day :)

Whole Wheat Pita Bread
I buy the smaller pockets because I don't like TOO much but these are the perfect compliment to any meal. Dip it in some Hummus (my favorite is roasted red pepper!)

Veggies
If you know me, I am seriously a foodie for Broccoli. I have it every single day and I literally crave it. YES I crave Broccoli. 
Steamed, Roasted, Stiryfry are the best ways.
Typically for lunch I just steam broccoli and have on the side with some spray butter or nutritional yeast ( cheesy nutritious flakes with a ton of vitamins).
Kale 
The only way I like kale are roasted to make them crispy and chip like.
They are the perfect addition to a sandwich.

So those are my latest cravings and things I have been having for lunch.
Feel free to let me know your favorite lunch combos because I LOVE finding new options...remember protein, healthy carb, and a veggie for the COMBO!

My meeting yesterday went amazingly well for the Moms and Me fitness classes.
I am going to be teaching a combination of classes and the 2 classes I am starting with are going to be:
Baby and Me Bootcamp (circuits using baby as weights!)
Mommy Flow (pilates, yoga, balance)
also starting a 5k training program for moms (strollers)
If you live in the Raleigh/Cary area you need to check them out :) They will be held at Sweet Bottoms Botique and they have a New Facility with a Classroom which the classes will be held! It is going to be awesome and I cannot wait to get started helping moms get back into shape and build a community for mothers to find a healthy active outlet!
I will be talking about this more as I get into it, but today I am working on the class descriptions and formats. Let me know if you have any questions!!

Today is a SUPER BUSY day with teaching. I teach 3 classes (Cycle, Abs and Ups, Bootcamp) and know I am going to be exhausted but I LOVE it. Nothing better than helping others enjoy fitness and getting paid to workout ;) 
Then when I am done teaching Bootcamp tonight I come back to Modern Family and Nashville! Two shows that I am loving!

Right now I am sippin on some coffee and snuggling up with Brooklyn. She has been LOVING snuggling lately and I hope this lasts...

  1. Love the picture of you and Brooklyn...so cute! Congrats on starting your classes; they sound like a lot of fun and I love the idea of using babies as weights, too. I always wanted to participate in mommy and me classes with Keenan was a baby, but we didn't have any in our area, thus the reason why I want to start some!
